When Master Distiller Booker Noe fathered the small batch movement over two decades ago, he created Knob Creek to restore the standards of pre-prohibition bourbon. The result is an undeniably big, full flavour that strikes your senses with a maple sugar aroma and a distinctive sweetness. Aged in only the deepest charred American Oak barrels to fully draw out the natural sugars, it is then bottled at an honest 100 proof to embody the big, full flavour that has made Kentucky famous for bourbon.

This is a lovely sipping bourbon and the fact it is aged really comes through in the way the flavour blooms in your mouth. There isn t much initial aroma from it and it does feel a little thin on the nose. The initial sip when it hits your mouth also feels very thin flavour wise but as you swallow then the depth really bursts in to life in your mouth. It is all in the back of the drink and this makes it perfect for slowly sipping . There is also a lovely warmth as it goes down, a really old fashioned nightcap warmth. My husband does like to mix this with a full sugar cola flavoured drink and whilst it is pleasing I much prefer a small pour over ice to take my time with. The bottle is also beautifully textured with a pattern that is reminiscent of sunlight dappled on slow flowing water. We did have some issues opening the wax seal on the bottle as it is fairly resistant to being pulled off but I got there in the end. This then reveals the lid which is the cork stopper type (my favourite on liquors).

    Anfangs möchte ich einmal erwähnen, dass ich bei dieser Rezension meinen eigenen Geschmack wiedergebe und Ihnen damit nur einen Anhaltspunkt zur ungefähren geschmacklichen Richtung des Whiskeys geben kann. Deshalb möchte ich gerne noch etwas das Hintergrundwissen zu diesem spezifischen Tropfen und der dahinterstehenden Brennerei vermitteln. Meiner Meinung nach trägt das Wissen über einen Whiskey deutlich zum Verständnis über die Aromen und den Geschmack des Whiskeys bei.

    Zudem möchte ich anmerken, dass die Anzahl der Sterne nicht zu 100% Rückschluss darauf bieten kann, wie gut dieser Whiskey wirklich ist. Denn ein guter Einsteiger Malt der zu einem günstigen/angemessenen Preis zu haben ist, kann genauso 5 Sterne erzielen wie ein deutlich teurerer aber dafür auch besserer Single Malt.

    Nach diesem kurzen Vorwort, lasst uns nun aber anfangen:

    ► Brennerei ◄
    Beim Knob Creek handelt es sich um einen Whiskey aus dem – uns allen bekannten – Hause Jim Beam. Er wird in Clermont, Kentucky, USA hergestellt. Folglich haben wir es hier mit einem Kentucky Straight Bourbon zu tun.
    Die Brennerei Jim Beam blickt auf eine lange Geschichte zurück. 1795 verkaufte der deutschstämmige Jakob Böhm – der sich zu Jacob Beam umbenannte – sein erstes Fass Whisky unter dem Namen „Old Jake Beam“ und legt damit den Grundstein für Jim Beam.
    Die Jahre gingen ins Land und die Brennerei entwickelte sich zu einem der größten Whiskey Produzenten der Welt (auch wenn sie während der Prohibition natürlich geschlossen war, danach aber wiederaufgebaut wurde).
    Anfang 2014 wurde Jim Beam übrigens vom japanischen Spirituosenkonzern Suntory übernommen, der sich dies etwa 12 Milliarden Euro kosten ließ.

    Jim Beam produziert wirklich jede Menge Whisky. Also bitte kritisch betrachten, wenn hier von langsamer Reifung und traditionellen Herstellungsverfahren gesprochen wird. Hier wird volles Rohr gebrannt und mit modernsten Methoden gearbeitet. Allerdings hat der Hersteller nicht nur die mit schlechtem Ruf behafteten massenproduzierten Whiskeys, wie den White Label im Angebot.
    Nein, bei solch einem Produktionsvolumen kommen natürlich auch richtig gut gereifte Whiskeys zum Vorschein (Stichwort: Small Batch Bourbons und Single Barrels). Aber auch Whiskeyliköre werden hier produziert.

    Durch ihren riesigen Bedarf an Fässern, besitzt Jim Beam zudem ihre eigene Fassfabrik.

    ► Der Whiskey ◄
    Beim Knob Creek patiently aged – der nach einem nahegelegenen Bach benannt wurde – (übrigens der „Nachfolger“ des 9-jährigen Knob Creek) handelt es sich um einen Vertreter der Small Batch Bourbons. Er ist der Einsteigerbourbon in diese Serie.
    Aber zuerst einmal kurz, zu den Small Batch Bourbons. Small muss hier unbedingt im Kontext betrachtet werden. Ich gehe davon aus, dass ein Small Batch – im Hinblick auf die sonst riesigen Batches des Herstellers – immer noch ein oder gar mehrere dutzend Fässer enthält. Aber der Name der Serie soll natürlich schon darauf hinweisen, dass man hier etwas Besonderes erhält. Marketing lässt grüßen ;)
    Wie auch immer, der Knob Creek patiently aged (bzw. damals der 9-jährige) verkaufte sich so gut, dass rund um die erschaffene Marke Knob Creek noch weitere Whiskeys verkauft werden. Dazu gehören der Knob Creek Single Barrel, Knob Creek Rye und der Knob Creek Smoked Maple.
    Der Knob Creek patiently aged, um den es hier geht, wird aus mindestens 51% Mais hergestellt (sonst dürfte er sich nicht Bourbon nennen), den restlichen Anteil teilen sich in unbekanntem Verhältnis Roggen und Gerste.

    Nachdem die angesetzte Maische fermentiert wurde, wird das so genannte Bier in die erste Destillationskollonne gefüllt. Nach diesem ersten Vorgang wird die so entstandene klare Flüssigkeit, Low Wine genannt, in der zweiten Kolonne auf einen maximalen Alkoholgehalt von etwa 80%Vol. hoch destilliert. Die erhaltene Flüssigkeit nennt sich nun High Wine, New Make oder auch White Dog. Diese wird anschließend noch auf 125 proof (entspricht 62,5%Vol.) verdünnt und so in die frischen Weißeichenfässer gefüllt, wo er nun lagert bis er zur Abfüllung bereit ist.

    Da er mittlerweile kein Alter mehr trägt, kann man leider nicht genau sagen wie alt der Whiskey denn nun ist. Ich gehe davon aus, dass die Fässer nun rein nach Geschmack ausgewählt werden und dass nach Mischung der ausgewählten Fässer der Whiskey immer noch genauso schmeckt wie der 9-jährige. Nur liegt es dem Hersteller eben nun frei auch Whiskeys einzufüllen, die jünger als 9 Jahre sind aber dafür beispielsweise besser gereift.

    Abgefüllt wird dieser Bourbon übrigens mit kräftigen 50%Vol.

    ► Farbe ◄
    Dunkles Bronze, geht Richtung Mahagoni (ungefärbt)

    ► Aroma ◄
    Zuerst klassisch mit süßer Vanille und Toffee. Anschließend kommt eine leicht würzige Note auf, die sich mit einer schönen Nussigkeit verbindet. Insgesamt ein schönes Zusammenspiel zwischen würzig und süß. Allerdings kommen mit der Zeit auch deutlich erkennbare fruchtige Noten dazu, die ich vor allem als Pfirsich- und Orangennote definieren würde.

    ► Geschmack ◄
    Zuerst sehr kurz eine süße Vanille, die aber sogleich von einer frischen Fruchtigkeit von Äpfel, Birnen und Pfirsichen verdrängt wird. Anschließend wird er immer würziger und würziger und noch würziger. Deutlich Eiche. Die 50%Vol. schieben den Geschmack ordentlich an und unterstützen den vollen und intensiven Charakter.

    ► Abgang ◄
    Der Abgang ist recht lang und intensiv. Er bleibt dabei immer würzig und zart bitter. Zum Schluss bleibt die Eiche übrig.

    ► Fazit ◄
    Wie hier demonstriert wird, kann Jim Beam auch anders und zwar deutlich besser als die bekannten Massenabfüllungen. Der Knob Creek patiently aged ist ein sehr guter, kräftiger Bourbon, der nicht nur die bekannten Vanillenoten beinhaltet, sondern auch viel Frucht und Würze im Repertoire hat. Vor allem im Geschmack und Abgang kann er überzeugen. Für diesen guten Preis ist er wirklich ein super Bourbon. Ich kann hier meine volle Kaufempfehlung aussprechen.

    Kleine Bemerkung: Ich persönlich setze diesem Whisky kein Wasser zu, ein paar wenige Tropfen öffnen ihn zwar ein wenig, allerdings wird der schöne intensive Geschmack auch abgeschwächt. Aber das ist natürlich meine höchstpersönliche Meinung. Also am besten selber ausprobieren.

    PS: Guten Whiskey, bitte artgerecht behandeln:
    - Auf Zimmertemperatur und ohne Eis genießen (wenn der Whiskey kalt ist beeinträchtigt das einerseits die Geschmacksnerven - weniger Geschmack, andererseits gibt der Whiskey weniger Aromen frei - Sie riechen weniger)
    - Am besten Nosingglas benutzen (keine Tumbler in denen das ganze schöne Aroma durch die große Öffnung nach oben verloren geht), Suchen Sie einfach nach Glencairn oder Snifter ;)
    - Zeit für den Whiskey nehmen; lange genug riechen um die Aromen zu erfassen (vor und nach dem probieren); einige Sekunden im Mund behalten um die Geschmäcker und deren Entwicklung beurteilen zu können; mit Whiskey beschäftigen (Herkunft, Inhalt, was erwarte ich von dem Whiskey?); dem Whiskey auch mal Zeit geben sich zu entfalten und eventuell mehr zu riechen
    - mit dem Whiskey experimentieren; evtl. etwas Wasser zugeben; manchmal tut das einem Whiskey sehr gut und er öffnet sich mit all seinen Aromen und Facetten
